Guacamole is a mexican recipe which can be used as a dip, spread and also as a salad ingredient. It is prepared with ripe avocados mixed with spices. I have come across many styles of preparing this dish. This is how I prepare guacamole at home and it is one of my favourites. I usually make this in bulk and freeze half of it. It goes well with bread, chips, cucumber or carrot sticks and with almost anything. This time I had it with Parathas and I felt that it was a great combination!!

Avocados when exposed to air turn to brown very quickly. Hence it is very important to add lemon juice to prevent the discolouration. It is also said that inserting the pit of an avocado into the guacamole will help maintain its colour.
This is a very quick recipe and I am sure you will enjoy this.
Ingredients:
Ripe avocados | 8 |
Chopped onion | 1 medium |
Green chillies | 2 |
Chopped tomato | 1 medium |
Lemon | 3 medium |
Chopped coriander leaves | 1/2 cup |
Salt | to taste |
1. Keep all of the ingredients ready. This is a quick process and we need all of these handy.
2. Halve the avocados as shown in the picture.
2. Remove the pit. Make cubes inside the shell itself by cutting it vertically and horizontally as shown below.
3. Scoop the cubes out with the help of a spoon. Quickly squeeze in half a lemon. Repeat the process for all the avocados.
4. In a food processor or blender, add all the ingredients and blend it. Some people prefer the guacamole to be chunky but I like it to be smooth.
5. Sqeeze in the lemon juice and store it in an air tight container. Do not forget to add a pit into the guacamole. I am not sure if it is just a myth but I do add it and my guacamole stays fresh for 3 days in the refrigerator.
