Welcome back to my blog!!
I have got an amazing recipe to share with you..especially to those moms having kids who dislike nuts. It might be really stressful for them to include nuts in their kids’ diet. My lil one hates walnuts and cashews. Walnuts are full of omega 3 fatty acids that are essential for healthy heart and healthy brain in kids. I just found a way to add this wonderful ingredient to her diet. She did not even recognize that the dish had walnuts in it. Hurray!!! I was so excited to see her finishing the entire serving on her plate.
Please note – This recipe is not authentic. I have modified the recipe as I wanted it to be dairy free(the original recipe has Parmesan cheese added to it). You can add nutritional yeast if you want to have a cheesy flavour like the real pesto sauce. But believe me, this dairy free recipe will satisfy your taste buds in every sense.
Ingredients for Pesto:
Basil leaves | 1 pack (I bought a small plant) |
Garlic cloves | 3 to 4 |
Walnuts | a handful |
Pine nuts | a handful |
olive oil | 1/2 cup |
Salt | as needed |
Lemon | juice of 1 lemon |
As I have mentioned, I bought a small basil plant which was available at Lulu Supermarket. I am trying to grow the same in my balcony.
Ingredients at one glance:
Method:
Add all the ingredients in a mixer or food processor and grind to a coarse paste. You can add water if you want the sauce to be thinner but I preferred the creamy consistency. Super simple!!!! Your pesto is ready to go..
I have used whole wheat pasta as it is rich in fibre and healthier than the regular one. You can use regular pasta too.
Cook the pasta according to the package instructions and mix the pesto sauce. Stir it well and serve hot!!!!! Your child will be so happy to try this.
Here is my daughter enjoying her after-school meal..
Do let me know your feedback through comments..will be back soon with a new recipe.
Healthy and delish stuff..
Thank you very much Ranjani..
