Today’s post is about a simple dairy free vanilla cupcake. The cake was very spongy and soft even without the addition of butter or any other fat. I am not taking too long to explain as the recipe itself is self explanatory. I found the recipe in one of the blogs but forgot the blog name..The ingredients are good enough for 12 cupcakes.
Ingredients:
Coconut milk | 1/2 cup |
egg whites | whites of 3 large eggs |
vanilla extract | 2 tsp |
All purpose flour | 1 1/4 cups |
Sugar | 1 cup |
Baking powder | 2 tsp |
Salt | 1/2 tsp |
Olive oil | 1/2 cup |
Method:
1. In a bowl, whisk together coconut milk, egg whites, vanilla extract and sugar.
2. In another bowl, sieve the flour after mixing the baking powder and salt. Pour the olive oil into the flour mixture and mix it well with your hands to make it crumbly. The flour should be coated with olive oil. Into this, add the coconut milk mixture and run the beater for about 3 minutes until everything combines well.
3. Preheat the oven to 350F and line the muffin pan with cupcake liners.
4. Scoop the batter and fill the liners (fill only 3/4 th of the liners as the cupcakes would rise when they are getting baked).
5. Bake for 15 – 17 minutes or until the toothpick inserted at the centre comes out clean.
6. Cool in a wire rack and enjoy..

Hi Dee, I did not understand your question actually. Did u mean to ask if we get store bought coconut milk here? If so, yes. We get coconut milk here in shops which is totally dairy free. You can even make fresh coconut milk at home without much hassle. Hope this clarifies..Thanks a lot for visiting my space and leaving your feedback.
