Last week had been so hectic for me and I hardly cooked anything exciting. Everyday went on with some kind of easy dishes as I had very less time to cook any elaborate meal. On one of those days, I did not have much vegetables and all I had was a bunch of basil leaves which I had bought to make pesto sandwich. I had some Dosa batter and I mixed pesto with the batter. Instant transformation of normal Dosa to Pesto Uthappam. I added almonds to the basil leaves instead of walnuts/pine nuts. Ingredients for the pesto:
Basil leaves | a bunch |
Almonds / Walnuts / Pine nuts | a handful |
Garlic cloves | 3 or 4 |
Lemon | juice of 1 lemon |
Salt and olive oil | as needed |
Other Ingredients:
Dosa batter | 1 bowl |
Oil | as needed |
Method:
1. Preparation of pesto: Add all of the ingredients in the first section to a mixer or food processor and grind it to a coarse paste. Pesto is ready.
2. Take the required quantity of Dosa batter in a bowl and add the pesto to it.
3. Heat a hot Tawa / griddle. Grease it with some oil. Take a ladle of the batter and spread it in circular motion. Drizzle a bit of oil on top. When one side of the dosa is cooked, turn and cook the other side too. Once done, remove from the Tawa and serve with any chutney.
This can be done within 20 minutes and is very suitable for busy mornings or as a lunch box recipe for kids. If you need it spicy, add 2 green chillies to the pesto.
