This simple recipe is a wonderful accompaniment for plain hot rice. When I am not in a mood to make any elaborate meal, this comes for rescue. The coriander flavour along with the Urad dal and coconut elevates your mood and is so fulfilling. Made this quick thogayal for lunch today and my daughter loved it. My mom makes it so tasty and this has always been a part of our menu back home.
Ingredients:
Coriander leaves | 1 bunch |
Urad dal | 2 tbsp |
Tamarind | 1 tsp |
Red chillies | 1 or 2 |
Coconut grated | 3 tbsp |
Gingelly oil | 1 tsp |
Salt | as needed |
Method:
1. Clean the coriander nicely under running water.
2. In a pan, add oil. When the oil becomes hot, add the Urad dal and red chillies. Wait for the Urad dal to brown a little. Make sure it does not get burnt.
3. Add the coriander leaves and allow it to shrink a little and switch off the flame. 30 seconds is more than enough for this as the pan is already hot.
4. Grind along with the grated coconut, tamarind and enough salt to a coarse paste.
5. Thogayal is ready to be served.
