Snake gourd is a very tasty vegetable. It has many health benefits and is also considered good for detox. This side dish is great with Rice and Rasam. As it is combined with channa dal (Kadala parippu) its nutritional value is also more. It does not take long to cook. Aren’t these enough reasons to try it for lunch? Enjoy this easy dish during the weekend..
Ingredients:
Chopped Snake gourd | 2 cups |
Channa Dal | 1/4 cup |
Coconut | 1/4 cup |
Green chillies | 1 or 2 |
Mustard seeds | 1 tsp |
Red chillies | 1 or 2 |
Curry leaves | as needed |
Oil | 2 tsp |
Salt | as needed |
Method:
1. Soak the Channa dal in water for 15 minutes. Cook it with enough water and salt. Drain the water and keep aside. Do not overcook it as we do not want the dal to be mashed up.
2. In a kadai or pan, add the snake gourd with water sprinkled on top. This needs very little water to cook and most of the time it leaves out enough water to cook by itself. Add salt and turmeric powder. The vegetable should be well cooked and the water should be absorbed completely making it dry.
3. With the help of a mixer, grind the coconut and green chillies.
4. In another pan, add oil. When the oil is hot, add red chillies, mustard seeds and curry leaves. When the mustard seeds splutter, add the vegetable, channa dal and coconut mixture. Mix well and simmer for 5 minutes. Check for salt again and add if necessary. Switch off the flame and serve with rice and rasam.
