Almond Chia Pudding

Last weekend when I prepared the almond milk, I thought of making chia pudding too. How many of you use chia seeds very often? These tiny seeds are loaded with omega-3 fatty acids and B vitamins apart from calcium, magnesium, iron, zinc etc. It is very easy to include chia seeds in our day to day life. You can add them in your smoothies, home made energy bars and even as an egg replacer. Yes, you heard it right..egg replacer / substitute. Just grind 1 tablespoon of chia seeds to a powder and mix it with 3 tablespoons of water and this can be used in place of egg (for your vegan / eggless bakes and smoothies).  When chia seeds are mixed with water, they become gelatinous. This gives a great texture to your smoothies too. Try this amazing breakfast pudding with Homemade Almond milk topped with seasonal fruits..You are going to fall in love with it for sure..

Almond Chia pudding

Ingredients of chia pudding:

Chia seeds 3 tbsp
Almond Milk 1 cup
Honey / Maple syrup 1 tbsp

Method:

1. In a mason jar or any wide mouthed jar with a lid, add all of the ingredients above and stir nicely. Close the jar and leave it in the refrigerator for a few hours (better if you leave it overnight) to set. Top with your favourite fruits, dried fruits, nuts or seeds. Enjoy!!!!

You can use any dairy free milk for this preparation. I have read that coconut milk is a great  combination too. Haven’t tried it myself though.. I used honey (fresh Yemeni honey that I had) but you can use any plant based sweetener if you are on a vegan diet. You can also reduce the amount of sweetener as per your preference. I made two versions (only difference is in the topping) as shown above. One was with mangoes, kiwi, green apples, blackberries and goji berries. In the other one, I omitted the mangoes and added strawberries instead. Can you guess which one was for my daughter?

Next time you buy chia seeds, do not forget to try this. This gives a lot of energy, keeps you fuller for long and is a great post-work out drink if you are concentrating on healthy weight loss.
