Chia Microgreen Salad

Last weekend was an amazing one. I had attended a workshop conducted by one of my friends (I have mentioned about him before on one of my older posts) who is so passionate about growing microgreens at his place. If you are wondering about what these microgreens are, it would be great to read this article. They are highly nutritious and can be grown easily at home. There were more than 25 people to attend the workshop and it was very informative and motivating. We were quite impressed with the wide variety of microgreens which my friend had grown and the display was so beautiful. There were barley grass, chia microgreens, kale microgreens, amaranth and flax to name a few. I am attaching some of the pictures below.

We were served a healthy breakfast before the session and we enjoyed it. Picture of the platter is below.

We thoroughly enjoyed every bit of the workshop and I am looking forward to growing my own microgreens at home!! I cannot thank him enough for this beautiful gesture..

After a couple of days, I made this healthy salad using the chia microgreens that I got.

As the chia microgreens are bitter in taste (healthy things usually do not taste good, isn’t it?), I have tried to mix it with mandarins and blueberries with a bit of orange juice. Honestly, it tasted so good and more than that it is the feeling of eating something which is extremely healthy for you. My husband also took it to his office and shared it with his friends.

Ingredients:

Chia microgreens a handful
Deseeded and chopped mandarins 3 medium
Blueberries 1 cup
Orange juice 2 tbsp
