Kuzhi Paniyaram / Morappam

This is a popular dish from Tamilnadu and it can be prepared very easily if you have Idli or Dosa batter. This is made with the help of a Paniyaram Pan which is easily available in Indian stores. It takes very little time to make this and I made it yesterday when my daughter’s friends were here. If you have left over batter at home, do try this for snack today..

Kuzhi Paniyaram 1

Left over Idli /  Dosa batter 2 cups
Finely chopped Onion 1 medium size
Green chillies as needed
Finely chopped Ginger 1 tsp
Finely chopped curry leaves 1 tsp
Mustard seeds 1 tsp
Oil for tempering and frying

1. In a pan, add little oil. When the oil is hot, add mustard seeds.

2. When the mustard seeds splutter, add ginger, green chillies, curry leaves and chopped onion. Fry them till the onions become translucent. Transfer the fried items into the batter kept in a bowl. Mix everything together.

3. Pour oil as needed into the holes of the Paniyaram pan. When the oil becomes hot, pour the batter into each hole and wait till one side gets cooked.

4. After about 3 minutes, flip each paniyaram carefully with a spoon and cook the other side. Make sure to keep the flame low. Then the paniyarams would be crispy outside but still would be cooked well.

5.  Once the other side is also cooked after about 3 minutes, carefully transfer them on to a kitchen tissue. Serve with your favourite chutney or ketchup.

There are many variations to this recipe. You can add any vegetables of your choice which are finely chopped or grated into the batter and it is a great way to hide the veggies if your child does not like them.  Some people add buttermilk to the batter and hence the name Morappam.
