Yesterday, I was feeling a bit low as I had cough due to the cold weather here. I wanted to cook something really quick and I remembered that there were 3 sweet potatoes in the fridge. Sweet potato dishes are liked by everyone in the family. This even reminds me of my childhood days when my mother used to make Podimas with Sweet potatoes. This dish can be had with Chapathi or any kind of bread. Sweet potatoes are high in Potassium, Vitamin A, Calcium and Vitamin C. So try to include this vegetable in your diet. One more secret – these are very good for the skin and slow down the aging process. We all deserve a glowing skin..Don’t we?
Ingredients:
Sweet potato (cubed and boiled) | 2 cups |
Chopped onion | 1 small |
Chopped garlic | 2 cloves |
Mustard seeds | 1 tsp |
Cumin seeds | 1/2 tsp |
Sambhar powder | 1 tsp |
Chilly powder | 1 tsp |
Turmeric | 1/4 tsp |
Coriander powder | 1/2 tsp |
Green chilli | 1 |
Chopped coriander leaves | 2 tbsp |
Oil | 1 tbsp |
Salt | to taste |
1. Boil the cubed sweet potatoes until they are tender. Do not over cook them as they would turn mushy.
2. To a pan with hot oil, add mustard seeds and once they start spluttering, add cumin seeds. After the cumin seeds crackle, add chopped garlic. Wait till the raw smell of garlic goes away. After this, add chopped onions and fry them till they are transluscent.
3. Add the green chilli(slit), turmeric, coriander powder, sambhar powder and the required amount of salt.
4. Sprinkle a few drops of water if needed.
5. Mix all the ingredients, simmer for 5 minutes and add the coriander leaves to garnish.
6. Sweet potato curry is ready to serve.
