I am back with a lunch recipe – one of our favourites.. Indo Chinese Lunch Combo..

This is not an authentic recipe..I have made alterations to original recipe to suit my taste as well as the availability of the ingredients in my kitchen. This was enjoyed by both my daughter and my husband. My husband has become a great fan of Chinese food these days and he orders them when we go out to eat. However, I always make sure to avoid Ajinomoto when I cook them at home as I have read a lot about the side effects of the same. Some restaurant people are kind enough to make the dishes without using Ajinomoto if we request them to do so..Now, enough talking and straight to the recipe:

Mushroom Fried Rice:

Mushroom Fried Rice

Ingredients:

Button Mushrooms finely chopped 1.5 cups
Basmati Rice 2 cups
Oil 2 tbsp
Chopped onion 1/2 cup
Chopped ginger 1 tbsp
Chopped Garlic 1 tbsp
Chopped Baby corn 1/4 cup
Chopped Spring onion (White part) 1/4 cup
Spring onion greens to garnish
Soya sauce 2 tsp
Tomato ketchup 2 tsp
Chilly sauce 1 tsp
Salt to taste

Method:

1. Cook the Rice separately with the required salt until it is almost done. Do not fully cook the rice. The grains should be separate. Keep it aside to cool down.

2. In a wide pan or wok, add oil. Once the oil is hot, add chopped ginger and garlic. After the raw smell goes off, add chopped onions and white part of spring onions. You can also add capsicum at this stage if you prefer. I did not have any, so skipped it.

3. Once the onions turn light brown, add chopped mushrooms and saute them. The mushrooms have moisture in them. So wait, till they leave out the water content and get cooked properly.

4.  Add chopped baby corn and mix well with the mushrooms.

5. Now, it is time to add the sauces – Soya sauce, chilli sauce and ketchup.  Mix them well on a low flame. Add salt for the veggies. Be very careful while adding salt to all the Chinese dishes as Soya sauce contains a lot of salt in it.

6. It is time to mix the rice with the veggies. I keep it on a very low flame and mix the rice in parts using a fork. You can use any method you feel comfortable with. Using a fork will help the grains to be separate even after mixing. As you know, a mushy fried rice is not appealing!! Adjust the salt, if necessary.

7. Garnish with spring onion greens and serve warm.

I just followed Vah Chef’s Recipe because I felt that it is the most detailed and awesome vegetable manchurian recipe that I have ever come across. The outcome was great and I can say that I can cook this dish with confidence.

Simple Gobi Fry

We are all big fans of this vegetable. I just wanted an extra punch to the Lunch combo and hence thought of making this quick recipe in my own way. This can be made as a snack or for lunch box as an accompaniment to the main meal.

Gobi Fry

Ingredients:

Cauliflower florets 2 cups
Corn flour 2 tbsp
Chopped Ginger 1 tsp
Chopped Garlic 1 tsp
Soya sauce 1 tsp
Chopped Spring onion greens 2 tsp
Finely chopped green chillies 1 tsp
Chilli powder 1 tsp
Salt to taste
Oil to deep fry

1. Clean the cauliflower and put them in warm salt water to remove germs, if any. Drain after 10 minutes and keep aside.

2. In a bowl, add corn flour, chilli powder, soya sauce, chopped ginger, chopped garlic and salt. Mix well with water without any lumps. You can also add all purpose flour to it for the texture if you like. I stay away from the white flour as far as possible and hence omitted that.

3. Heat the oil in a big Kadai or pan. Once the oil is hot, dip each cauliflower floret in the batter and fry them in oil. Do not add too many pieces at one go as this reduces the temperature. Fry them in small batches and drain well on a paper towel.

4. Gobi fry to ready to be served..

Always serve this dish hot for the best results..
