Dairy free chocolate cupcakes (Hershey’s recipe)

During the weekend, little S was in a mood to eat cup cakes and this time I thought of making chocolate cupcakes. I always have Hershey’s cocoa powder in stock as I make Hot chocolate for S very often – of course, in non dairy milk. But I haven’t tried the recipe which is given behind the cocoa tin yet. This time, after much thought I attempted that recipe and the cupcakes were fabulous….If you are in a mood to have cupcakes, I strongly recommend this recipe. I have made the cupcakes with coconut milk (in place of cow’s milk which the recipe calls for) and I could not find any difference in texture or taste. I used the canned Organic coconut milk (Organic Larder). The cakes were so moist and spongy. We enjoyed the cupcakes with coffee and all of them vanished so quickly.

The cakes can be frosted if you wish to. But little S was already losing patience and wanted to try them without the frosting on. The cakes were yummy even without frosting.
