Dairy free Leek and Potato Soup

This is a classic soup recipe. Very easy to make and very healthy too.. Very few ingredients combined together to make a tasty bowl of soup. The texture of this soup is very creamy even without the addition of cream or milk. Do try this and you will love it..

Leek and Potato Soup 1

Ingredients:

Chopped Leeks 1 cup
Chopped potato 1 cup
Chopped garlic 1 tsp
Oil 1 tbsp
Veg stock /  Water 4 cups
Salt as needed
Pepper powder as needed

Method:

1. In a heavy bottomed sauce pan, add oil.

2. When the oil becomes hot, add chopped garlic. Wait for the garlic to lose its raw smell.

3. Add leeks and saute them a bit. Then add chopped potatoes.

4. Add 4 cups of vegetable stock or water and cook in medium flame. Cover the sauce pan while cooking.

5. After the potatoes are half done, add enough salt. Boil again till the potatoes are fully cooked. Allow it to cool down a bit.

6. Blend the soup. Add pepper powder to taste.

7. Serve the hot, creamy Leek and Potato Soup…Enjoy!!!!
