I had this Seethaphal – Cream from Haji Ali a few years back and instantly fell in love with it. I love Custard apples and whenever they are available, I just buy it. My husband also likes the combination of this fruit with cream. My daughter does not like the appearance of this fruit and is really reluctant to try it.
I decided to make this dessert with cashew cream (dairy free and vegan). As expected, she did not recognize the fruit hidden under the cream..and she liked it!! Here is the simple recipe for you to try..
The only difficult part in making this is separating the flesh of the fruit from the seeds. I should say that it is tedious and please watch your favourite show on TV when you do it. Otherwise, you are going to be bored for sure..
Method:
For making the cashew cream, soak 1 cup of cashews in water (water should cover the cashews) for about 4 hours.
Drain the water. Put the cashews, 1/4 to 1/2 tsp of vanilla essence, sugar (as needed), ice cubes and some cold water in a blender. Blend it till you get smooth creamy consistency. Refrigerate it for sometime if it is not cold enough even after adding ice cubes.
In a dessert serving bowl, arrange the seethaphal (custard apple) as the bottom layer. Pour the cashew cream over and top it with your favourite dry fruit. I have topped it with cranberries to add some colour.
Please add enough sugar as this is a dessert. The fruit has a lot of nutritional value and is supposed to be rich in vitamin B6, copper and potassium. Make this dessert at home and enjoy with your loved ones…
