This week, I have been super lazy. This usually happens when we get back to our routine after the school holidays. It takes about a week to be back to the normal day to day activities. This is one of the recipes that can be prepared in less than half an hour and is easy peasy..
Ingredients:
Broccoli florets | 1 cup |
Basmathi rice | 1 cup |
Water | 2 cups |
Cumin seeds | 1 tsp |
Chopped onion | 1/2 cup |
Green chillies | 1 or 2 |
Chopped garlic | 1 tsp |
Coriander powder | 1 tbsp |
Cumin powder | 2 tsp |
Garam Masala | 1 tsp |
Oil | 2 tsp |
Salt | as needed |
Method:
1. Wash the broccoli florets well after immersing them in warm water for about 10 minutes.
2. Cook the basmathi rice. I cooked the rice in pressure cooker. You can cook it on stove top for better results. I did not have time to properly fluff up the rice as this was prepared in a hurry. But no compromise on the taste factor!!
3. In a pan, add oil. Add cumin seeds when the oil is hot. Add chopped onions, garlic and green chillies. Allow the onions to brown a little.
4. Add the broccoli florets, spice powders and salt.
5. Mix well. Switch off the stove.
6. Serve hot.
This is a great lunch box recipe and is very nutritious. Try this recipe and let me know how you liked it.
