I am always in search of healthy snacks on the go. This is an awesome recipe which was passed on to me by my friend Marilyn who posts at Healthy Kitchen. Very easy to make as there is no baking required. An excellent snack to carry when you are heading for a long trip or even to munch while watching your favourite movie. It hardly takes 10 minutes to prepare and a few hours of refrigeration. Try this and let me know how you liked it. You can alter the dried fruits as per your choice. Chia seeds are also important nutritional source and provide a lot of energy.
Ingredients:
Dates | 1 cup |
Raw Almonds | 1 cup |
Dried Goji berries | 1/2 cup |
Dried raisins | 1/2 cup |
Vanilla extract | 1 tsp |
Chia seeds | 1 tbsp |
Cinnamon powder | 1/2 tbsp |
Water | a tiny bit, if necessary |
Method:
Combine all of the above ingredients together in a mixer or a food processor. You can add very little amount of water if needed (to bring everything together). Place it in a baking dish or tray and refrigerate for a few hours. You can cut into desired shapes after it has become firm.
My daughter even wrapped them with baking paper and made them look like toffees. She used different colours of loom bands too..

Try this Gloria..I am sure you will like it. You can substitute the goji berries with cranberries too. I am not sure of the availability of goji berries there. Let me know once you try it..
