Vishu is the harvest festival of Kerala and we celebrate it with lots of rituals. There is a Vishukkani kept in every house and we should get up early in the morning and see that Kani.
It is a very auspicious day and we prepare feast and serve on plantain leaf. It is called Vishu Sadya. There are many traditional dishes served for Vishu Sadya and these days the Sadya is readily available in various restaurants. It has become much easier for everyone to have this Sadya even if they are busy and cannot prepare the Sadya themselves. Today, I am preparing a dairy free mini sadya with some of these recipes and I will try to post some of them in the coming days. For now, this is a simple banana chips recipe just for you all..
Ingredients:
Raw banana | 3-4 medium |
Turmeric powder | 1/2 tsp |
Salt | as needed |
Oil for frying | as needed |
Method:
Slice the raw bananas as thinly as possible. You can slice it with the help of a slicer. Immerse them in water with turmeric in order to avoid them becoming black. Drain and arrange them on a baking sheet and remove the excess water.
If this is difficult for you, you can remove the skin of the raw bananas, wash them and directly slice them on to the hot oil with the help of a slicer / grater.
I followed the first method but it is really hard to slice them thin with the help of a knife (I couldn’t get hold of a slicer this time and I felt that it is a very tedious task). Please, please, please use a slicer and do this…
Now coming back, after the excess water has been removed, heat oil in a pan. Coconut oil is the best for frying these and the flavour that it imparts is not comparable to any others. In a small bowl, add water and salt together. This saline solution needs to be sprinkled after the raw banana slices have been dropped in hot oil.
Once the oil is hot, add small batches at a time, sprinkle the saline solution and close the pan with a lid. You can hear the spluttering noise. When it stops, remove the lid. Fry till it cooks well. Remove with a slotted spoon and drain the excess oil with the help of paper towels. Once it is cooled, store these in air tight containers and enjoy!!
