Cranberry Pickle

It has been raining in Dubai for the past 2 days and I am in a mood to eat hot rice with Pickle. I had bought a pack of fresh cranberries last time I visited the supermarket and I thought of making pickle using them. I used ready made pickle powder for this recipe. You can try making with your own home made pickle powder too. A very easy recipe but a great combination with Rice.

Cranberry pickle

 

Ingredients:

Fresh cranberries 1 packet
Pickle powder 3 tbsp
Turmeric powder 1 tsp
Chilli powder 2 tsp
Asafoetida 2 tsp
Gingelly oil 1/4 cup
Salt to taste

1. Heat the pan and pour in the Gingelly oil. You can use vegetable oil too but I love the flavour that Gingelly oil gives to the pickle.

2. Add asafoetida and then add fresh cranberries. Saute them for a while till they start getting mashed up.

3. Add the pickle powder, chilli powder, turmeric and salt at this stage and wait till the oil oozes out from the mixture.

3. Keep stirring till the oil oozes out from the mixture.

4. Cool down the pickle for sometime and store it in a clean, air tight bottle.

Cranberries are very good for preventing Urinary Tract Infections and for lowering blood pressure. Researches have indicated that they are even used for treating certain types of cancer.
