It has been long since I posted on this blog. Was really busy for the last three weeks…I am back now with an easy snack – Vegetable cutlet. My daughter loves this and when we went to India, my Uncle bought her nice veg cutlets from a nearby restaurant and she was so fond of them. Thought of making it at home. Hope you all would like it and please let me know your comments.
Ingredients:
Boiled Mashed potato | 1 big |
Onion | 1 big chopped |
Mixed veg (Beetroot, French Beans,Carrots, Peas) | 1 cup chopped finely |
Chopped Ginger | 1 tbsp |
Green Chillies | 2 nos |
Chopped Garlic | 1 tsp |
Coriander Powder | 1 tsp |
Turmeric (optional) | 1 tsp |
Garam Masala | 1 tsp |
Chopped Coriander leaves | 1 tbsp |
Curry Leaves chopped (optional) | 1 tbsp |
Cashew powder (optional) | 2 tbsp |
Corn Flakes crumbs | as needed |
White flour | as needed |
Oil | for deep frying |
Salt | to taste |
1. Chop the onion and veggies finely using a food processor.
2. Boil the potato and keep it aside.
3. In a pan, add little oil, onions, ginger, garlic, green chillies and curry leaves. Saute till the raw smell goes away.
3. Add the veggies to it and saute till they are almost done. Add the mashed potatoes and mix well after adding enough salt.
4. Add turmeric, coriander powder, cashew powder and coriander leaves to the mixture.
5. Cool the veggies. In the mean time, take some white flour and add some water to make it a paste. The paste should not be too thick or too watery.
6. Once the veggie mixture is cool enough, make small balls out of it. Dip the balls in the flour paste and then coat them with corn flakes crumbs. You can substitute it with breadcrumbs as well.
7. Deep fry the cutlets in oil until they are evenly coloured and cooked inside. Drain them on to a paper towel and enjoy with ketchup.
You will feel so happy to see the smile on your little one’s face as they enjoy these homemade cutlets.
