I make chapathis very often in my kitchen – at least 4 times a week. Though my little one is not very fond of chapathis as such, she loves to have chapathi noodles – a very easy and healthy snack. This can be made with left over chapathis and can be used as a lunch box recipe too. I always add lot of veggies to make it rich and colourful. This is so flavourful and addictive – so don’t be shocked if you find yourself eating 2 servings at one go!!!

Ingredients:
Chapathis | 6 to 8 |
Sliced onions | 1/2 cup |
Mixed veggies sliced | 1 cup |
Sliced green chillies | 1 or 2 |
chopped spring onions | 2 – 3 tbsp |
Garlic sauce(optional) | 1 tbsp |
Ketchup | 1 tbsp |
Pepper | 1/2 tsp |
Oil | 2 tbsp |
Salt | as needed |
Method:
1. First, chop the chapathis as shown in the picture:
2. In a pan, add a little oil and saute the sliced onions along with the sliced green chillies.
3. After the onions turn brown, add the sliced veggies (I have used red pepper, orange pepper, cabbage and carrot) and the white part of the spring onions.
4. Add salt,pepper and garlic sauce (optional).
5. Once the veggies are half cooked, add chopped chapathis and ketchup. You can add soy sauce if you like. I did not add that.
6. Mix very well and finally add the spring onion greens. Switch off the flame and serve hot.
