This morning I was quite fresh and wanted to cook something different for breakfast. I had made pancakes with soy milk before. I wanted to try the same with coconut milk this time. I have taken the basic recipe from Joyof Baking and made small changes.
The outcome was fabulous!!!! Perfectly soft and fluffy pancakes..My daughter enjoyed it so much and I am sure I would be making it more often..I strongly recommend this recipe to all my readers and friends..Try this and have a great day!!!
Ingredients:
All Purpose flour | 1 cup |
Sugar | 2tbsp |
Baking powder | 1.5 tsp |
Egg | 1 medium |
Coconut milk | 1 cup |
Salt | 1/4 tsp |
1. Sift the flour along with baking powder. Add sugar and salt. Whisk well.
2. In a bowl, beat an egg and add milk to the egg mixture. Pour the wet mixture into the dry mixture. Mix using cut and fold method. Do not overdo the stirring or mixing even if there are lumps in the mixture.
3. In a non stick pan, rub a little oil and add a ladle of the prepared batter at medium heat. The heat adjustment is very important to get even colouring on the pancake.
4. You can see small holes appearing on the pancake as it gets cooked. This is exactly what we want. Flip and cook the other side as well. Your pancakes are ready..
5. Serve the coconut milk pancakes with maple syrup or any syrup of your choice.
