Murukku or Chakli is a very popular snack made during festive seasons. Very crispy and fresh, these are so delicious when they are home made. My daughter likes it so much and I decided to give it a try yesterday. I have made Kai Murukku (murukku which is shaped using our fingers) a couple of times before. But this time, I decided to make using the Star Achu (mould) as shown in the picture below. The ingredients are very few and always available in our kitchen and this was made without adding butter. You can add butter if you wish to but since I had to make it dairy free, I used oil. It was equally yummy and my daughter really enjoyed it.
Ingredients:
Rice flour | 2 cups |
Urud Dal Flour | 1/2 cup |
Sesame seeds | 1 tsp |
Ajwain (Carom seeds / Omam / Ayamodakam) | 1 tsp |
Oil | for frying + 3 tbsp |
Salt | as needed |
The Idiyappam Nazhi (Idiyappam maker) and Star achu are shown in the pictures below for your info.
Method:
1. Roast the half cup of whole Urud Dal until it gives out nice aroma. Cool it down and powder it finely.
2. Mix the Urud Dal powder with 2 cups of Rice Flour. Add 3 tbsp of hot oil to the flour mixture along with salt, sesame seeds and Ajwain. Mix well and make into a dough with water. Do not make it too watery or too stiff. The dough should be soft.
3. Add oil to the big Kadai and let it become hot. Frying should be done on medium heat. Therefore, adjust the temperature accordingly.
4. Using the Idiyappam maker (shown in the picture above) with the star achu, make the Murukku shape either on a greased cover or plantain leaf. This might seem a bit tricky at first, but after 2 or 3 murukkus, you will get it.
5. Fry the murukku in small batches till they are golden in colour.
Notes:
Do not allow the dough to get dry. The murukkus will break if the dough is too dry.
Maintain the temperature of oil without being too high or else the murukkus will be burnt faster and lose their flavour.
