This is a very quick lunch which can be made within minutes. I usually make it when I run out of veggies or when I am in a hurry. Absolutely delicious and time saving lunch recipe..I did not have cashew nuts and hence added peanuts. I love peanuts in rice dishes like coconut rice and puliyodarai. Try this simple recipe which takes your stress away when you are really tired and have very less time and energy to cook.
Ingredients:
Raw Rice | 1 cup cooked |
Grated coconut | 3/4 cup or as needed |
Oil | 1 tbsp |
Red chillies | 3 or 4 |
Urad Dal | 2 tsp |
Mustard seeds | 1 tsp |
Curry leaves | as needed |
Peanuts / Cashew nuts | 1/4 cup |
Salt | as needed |
Method:
1. Cook the rice separately.
2. In a pan, add oil. When the oil is hot, add Urad dal. When it turns slight brown, add mustard seeds and allow them to splutter.
3. Add curry leaves and peanuts. Saute the peanuts and finally add rice along with the grated coconut. Add enough salt and mix well.
4. Serve the coconut rice with any pickle of your choice and papad.
Perfectly done rice.. it will be best to pack for lunch with some potato fries
