Mint Coriander Rice

I wanted to have a light, comforting one pot meal today and I had a bunch each of mint and coriander leaves sitting in my fridge. Without a second thought, made this aromatic mint coriander rice. Everything was ready in less than 40 minutes. The combination of garlic, mint and coriander created a wonderful aroma in the house and I could not wait to have it. Try this rice and you will fall in love with it..

Mint Coriander Rice 2

 

Ingredients:

Basmati Rice 1 cup
Mint leaves 1/2 bunch
Coriander leaves 3/4 bunch
Diced potatoes 1/4 cup
Garlic cloves 6 medium
Bay leaf 1 crushed
Cumin seeds 1 tsp
Fennel seeds (optional) 1/2 tsp
Green chillies 2 or 3
Oil 1 tbsp
lemon juice (optional)  2 tsp
Water 2 cups or as needed
Salt as needed

Method:

1. Soak the Basmati rice for about 15 minutes.

2. In a pan, add oil. When the oil is hot, add bay leaf, cumin seeds and fennel seeds.

3. Make a green paste of coriander leaves, mint leaves, green chillies and garlic cloves with a little quantity of water (do not use more water).

4. When the cumin seeds crackle, add the green paste and saute for a minute. Also add diced potatoes at this point.

5. Add water to it and let it come to a boil.

6. Add salt and then add the soaked rice. Pressure cook it for 7 – 10 minutes until the rice is done.

7. Add lemon juice (optional) just before serving.

8. Enjoy the hot rice with Papad or Raita.
