A quick, masala rice with cauliflower is what I am posting today. I was a little doubtful when I made this recipe but I should say that everybody at home really enjoyed this variety rice. Try this and let me know your comments..
Ingredients:
Cauliflower florets | 2 cups |
Basmati Rice | 2 cups |
Channa Dal | 1 tbsp |
Urud Dal | 1 tbsp |
Coriander seeds | 1 tbsp |
Cumin seeds | 1/2 tsp |
Red chillies | 3 large |
Curry leaves | as needed |
Mustard seeds | 1.5 tsp |
Oil | 2 tbsp |
Salt | as needed |
Water | 4 cups |
Method:
1. Cook Basmati Rice with enough salt and let it cool down. Make sure the grains are separate.
2. In a pan, dry roast red chillies, channa dal, urud dal, cumin seeds, coriander seeds and 1/2 tsp of mustard seeds. Cool it and grind it to a coarse powder.
3. In the same pan, add oil and the remaining mustard seeds. When the mustard seeds crackle, add curry leaves and add the cauliflower (after cleaning it well by immersing in salt water). Saute well and add the required amount of salt. When the cauliflower is almost done, add the ground powder. Coat the vegetable with the ground masala powder and finally add rice. Switch off the flame and mix well. You can add small quantities of rice at a time so that it gets properly mixed.
4. Serve with Pappadam and Pickle.
You can adjust the number of red chillies according to the spice level desired. This can also be used as a lunch box recipe for kids.
