I tried this whole wheat, eggless cake recipe during the weekend. I had a great helper with me when I made it – Guess who?? It was my daughter Shreya. She had a home learning assignment to be done for school and that was “Cook with mom and explain what different maths skills you use while cooking”. I thought of baking a cake with her and this is what we made..This cake has a subtle orange flavour and it is a healthier alternative to the usual cakes loaded with fat. I saw this at Dassana’s space and instantly wanted to try it. It is made out of whole wheat (I used the normal chapathi atta) and carries olive oil in place of butter. The cake was super moist and very very delicate. You can definitely expect a messy plate and table while having this. Who cares about the mess when the cake tastes heavenly? If you are a fan of orange cream biscuits, you are definitely going to like it. I am sure I will be making it again within a few days.
The original recipe calls for a 7 x 4 loaf tin but I had only 81/2 x 41/2 loaf tin. The recipe worked fine with the same baking time.
Ingredients:
Whole wheat flour | 1 cup |
Baking powder | 1/2 tsp |
Baking soda | 1/2 tsp |
Sugar | 1/2 cup |
Salt | a pinch |
Corn starch | 1 tbsp |
Orange juice | 3/4 cup |
Olive oil | 1/4 cup |
Orange zest | 1/2 tsp |
Method:
1. Preheat the oven to 180 degree celsius.
2. Sieve together the flour, baking soda, baking powder, corn starch and salt.
3. In another bowl, add olive oil and sugar. Mix well using a wooden spoon or an electric beater.
4. Add orange juice and zest to this and slowly fold in the flour mixture. After folding in, you can even run the electric beater for a few seconds. Do not overdo this.
5. Keep the loaf tin ready by greasing it with olive oil.
6. Pour in the cake batter and bake for about 30 – 35 minutes. For me, it took exactly 30 minutes but this may vary according to the oven used.
7. After the cake is done (check with a tooth pick – insert the tooth pick into the centre of the cake and it should come out clean), cool it in a wire rack and then serve it.

When I saw this recipe, I knew I was going to have to save it because I have been slowly changing my eating habits and the thought of this citrusy cake being eggless and dairy free was quite enticing.
