Quinoa Brown Rice Adai

Adai or Ada Dosai is usually made with a mix of lentils and rice and it is very popular in South India. This can be served for breakfast and is very high in protein. This particular recipe (adapted from Divya’s space) is even more healthier due to the addition of Quinoa. Quinoa is a super food. The white rice has been substituted with brown rice too. If you are looking for a high protein tiffin item with the right combination of carbs (especially for your little ones), then please go ahead and try this recipe. No need to ferment the batter and just 3 – 4 hours of soaking the lentils and rice would do the trick.

Quinoa Brown Rice Adai 1

Ingredients:

I. To be soaked for 3 – 4 hours (Quinoa should be washed thoroughly before soaking. If not, the whole batch of batter would turn bitter)

Quinoa 1 cup
Brown Rice 1 cup
Whole Urad dal 1/4 cup
Whole green gram 1/4 cup
Toor Dal 1/2 cup

II. Other ingredients:

Red chillies 2 small
Cumin seeds 1 tsp
Peppercorns 1 tsp
Asafoetida 1 tsp
Curry leaves 1 or 2 sprigs
Salt as needed
Oil as needed

Method:

1. After 3 – 4 hours of soaking, grind together all the ingredients except salt and oil.

2. Add enough water while grinding but the batter should not become too watery. A medium consistency is required.

3. Add salt to the ground batter and mix well.

4. Heat an iron tawa or griddle. Drizzle some oil and spread it with the help of a tissue. Pour a ladle full of batter on the tawa and spread in circular motion. Drizzle some oil on top of the Adai. Wait for it to cook on one side (it will turn golden brown) and then turn it to the other side and wait for it to cook.

5. Remove from the Tawa and serve with sambhar and your favourite chutney or Molagappodi (breakfast chutney powder).
