I have been getting a lot of requests on how to make almond milk at home. Almond milk is one of the best alternatives to cow’s milk. It is a great source of calcium and magnesium along with the presence of other vitamins and minerals which are essential for a healthy life. Almond milk is naturally low in saturated fat and is cholesterol free. It has a creamy texture and a light taste. Plant based diet is gaining more and more importance in today’s world and this recipe can be used as a stepping stone by anyone who is inclined towards a vegan lifestyle.
This post is dedicated to all those readers who would like to try making almond milk at home. Store bought almond milk always contains preservatives and ingredients like Carrageenan which can often lead to harmful gastrointestinal side effects. Homemade Almond milk is economical too. Make sure you soak the almonds well (for about 10-12 hours or overnight).This step helps in getting rid of enzyme inhibitors, phytic acid etc which can actually reduce the absorption of vitamins and minerals.
The ratio of milk to water in this recipe largely depends upon individual choice and taste. I use about 2 1/4 cups of water to each cup of almonds. That is how I like the consistency to be. Feel free to experiment with the amount of water.
Ingredients:
Raw almonds | 1 cup |
Honey / Dates | 2 tbsp / 2 pitted dates |
Filtered Water | 2 1/4 cups |
Salt (optional) | a pinch |
Yield : About 2.5 to 3 cups of almond milk.
Method of preparation:
Soak 1 cup of almonds for 12 hours. Soak the pitted dates too if you are using. I used honey this time as I had ran out of dates in the kitchen. Rinse the almonds well. Blend all of the ingredients together in a powerful blender. Strain the milk through a muslin cloth or a nut milk bag, if you have one. My strainer has really small holes and I used that.
Pour it into a bottle and refrigerate for 2 – 3 days. It will stay good for 3 days. You can enjoy it with your breakfast cereals or french toast or any other recipe that calls for dairy.
You can add vanilla extract or cinnamon or both to the milk if you like. It gives you a vanilla flavoured almond milk.
