Who doesn’t love these South Indian Doughnuts? This is another version of Vada or Vadai – with mixed vegetables and lentils. Try this instead of the usual Medhu Vada and it is perfect as a snack or tiffin especially on a rainy day!!
Ingredients:
Toor Dal | 1/2 cup |
Urad Dal | 1/2 cup |
Moong Dal | 2 tbsp |
Green chillies | 1 tsp chopped finely |
Finely chopped Onions | 1/4 cup |
Finely chopped ginger | 1 tsp |
Finely chopped French beans | 1/4 cup |
Finely chopped carrots | 1/4 cup |
Curry leaves | finely chopped as needed |
Coriander leaves | finely chopped as needed |
Asafoetida | 1/2 tsp |
Salt | as needed |
Oil | For frying |
Method:
Soak the lentils for about an hour. Grind it coarsely in a mixer.
Mix it with rest of the ingredients and shape them into Vadas. Fry them in oil until golden brown.
Please fry them on a medium flame so that the Vadas get cooked inside.
While shaping the Vadai, wet your hand a bit. This really helps in making perfect Vadais.
