Vegetable Vadai

Who doesn’t love these South Indian Doughnuts? This is another version of Vada or Vadai – with mixed vegetables and lentils. Try this instead of the usual Medhu Vada and it is perfect as a snack or tiffin especially on a rainy day!!

Veg Vadai 1

Ingredients:

Toor Dal 1/2 cup
Urad Dal 1/2 cup
Moong Dal 2 tbsp
Green chillies 1 tsp chopped finely
Finely chopped Onions 1/4 cup
Finely chopped ginger 1 tsp
Finely chopped French beans 1/4 cup
Finely chopped carrots 1/4 cup
Curry leaves finely chopped as needed
Coriander leaves finely chopped as needed
Asafoetida 1/2 tsp
Salt as needed
Oil For frying

Method:

Soak the lentils for about an hour. Grind it coarsely in a mixer.

Mix it with rest of the ingredients and shape them into Vadas. Fry them in oil until golden brown.

Please fry them on a medium flame so that the Vadas get cooked inside.

While shaping the Vadai, wet your hand a bit. This really helps in making perfect Vadais.
