I am a fan of South Indian Curd Rice. This curd rice is dairy free as I have used Soy yogurt to make the same. In addition, it has got other healthy vegetables namely Spinach, Broccoli and French beans. I thought of making plain curd rice and a vegetable curry initially but then changed my mind and added the veggies to the rice itself to save time. But I am very happy that I did it – the end product was so yummy and we enjoyed it so well. Please do try this recipe and I guarantee that you will be feeling so refreshed.
Ingredients:
Rice | 1 cup |
Chopped Spinach | 1 cup |
Broccoli florets | 1/2 cup |
French beans (chopped and boiled with salt) | 1/2 cup |
Soy yoghurt | 1.5 cups |
Cumin seeds | 1 tsp |
Shallots chopped finely | 2 tbsp |
Mustard seeds | 1/2 tsp |
Curry Leaves | 1 sprig |
Chopped coriander leaves | 2 tbsp |
Sliced green chillies | 2 numbers |
Asafoetida | a pinch |
Chopped ginger | 1 tbsp |
Gingelly oil | 1 tbsp |
Salt | to taste |
1. Boil the rice in a pressure cooker to a slightly mashed consistency. Keep this aside and let it cool down.
2. In a frying pan, add gingelly oil. Once the oil is hot, add mustard seeds.
3. When the mustard seeds start spluttering, add the cumin seeds, ginger, green chillies, curry leaves, asafoetida and chopped shallots in order.
4. When the shallots are slightly brown in colour, add chopped spinach and broccoli. Sprinkle a tsp of water and let it become cooked for 2 – 3 minutes. Do not cook for more time as we want the broccoli to be crunchy.
5. Once the spinach and broccoli are cooked, add the boiled beans and mix the veggies well.
6. Add little bit of salt. Do not add too much as we had boiled the beans with salt initially.
7. Switch off the flame and add them into the rice and mix the soy yogurt. Adjust the salt to taste and serve with any pickle of your choice.
