This is a spontaneous recipe which came to my mind yesterday. I had vegetables like broccoli and mushrooms in my fridge but was bored to make pasta or vegetable curry. Suddenly I thought of surprising little S with a Dairy free pizza. I was so excited to discover that I had some left over pesto sauce too which I had made for pasta day before yesterday. Just combined everything and made this Pizza. Everyone enjoyed it and the Pizza was finished in no time!!!!
Try this delicious vegetable pizza with a healthy touch of basil – walnut – pine nut pesto. The recipe of pesto sauce is right here. I have tried making the pizza dough using the recipe from Rak’s Kitchen and substituted milk with coconut milk in mine.
Ingredients for the pizza dough:
All purpose flour | 1.5 cups |
Instant yeast | 1 tsp |
Coconut milk | 1/4 cup |
Water | 1/4 cup |
Olive oil | 1/8 cup |
Salt | 3/4 tsp |
Sugar | 1.5 tsp |
For topping:
Sliced onions, Sliced, mushrooms, Sliced bell peppers (red and yellow) and broccoli with pesto sauce as needed.
Method:
1. Warm up the milk with water and sugar. In a bowl, add the dry ingredients namely flour, salt and yeast. Pour the warm milk mixture and olive oil to the flour mixture and knead well. Make a pliable dough and keep it covered with a wet cloth for about an hour. Keep it in a warm place.
2. After about an hour, the dough would have risen and become double in size. Knead again and keep it for another 10 minutes.
3. At this time, preheat the oven to 200 degree celcius. Knead the dough and roll it into a thick pizza crust. Use flour to dust if required. Transfer this to a pizza pan. I did not have a pizza pan. So I used my normal non stick baking pan greased with olive oil.
4. Spread the pesto sauce on the crust and arrange the toppings as desired. If you have dairy free cheese available you can add that. I did not have any. But still the pizza was awesome!!
5. Bake for 14- 15 minutes and serve hot.

Pizza looks good. I almost tried the same but used Homemade tomato sauce instead of Pesto. Tastes great. Nice Pics too.
