Broccoli Stir Fry with Almonds

Today’s post is a simple Broccoli stir fry with almonds..very easy to make and really healthy with a nutty crunch. This could be had with steamed rice or chapathis. It can also be used as a stuffing for chapathi rolls. I have used sambhar powder in the recipe. You can also use garam masala or Italian seasoning instead. Perfect for busy mornings as this could be made under 30 minutes and serves 2 -3.

Broccoli Stir fry with Almonds 2

Ingredients:

Broccoli florets 2 cups
Garlic cloves 5 or 6
coarsely ground almonds 2 tbsp
Mustard seeds 1 tsp
Oil 2 tsp
Green chilli 1 or 2
Sambhar powder 1 – 2 tsp
Turmeric powder 1/2 tsp
Salt as needed

 Method:

1. Wash the broccoli florets (after dipping it in warm salted water for about 2 -3 minutes). Drain it.

2. Coarsely grind the almonds and keep aside.

3. In a pan, add oil. When the oil is hot, add mustard seeds and wait for them to splutter.

4. Add Green chilli and Garlic cloves and saute till the raw smell of garlic goes away. Add turmeric, sambhar powder and saute for 30 seconds on low flame.

5. Add the broccoli florets and the necessary salt. Stir together and cover the pan. Cook on low flame for 5 minutes. Open the lid and gently stir it again. If needed sprinkle water. Add the ground almonds and add more salt if necessary. Mix well and let it cook on low flame for another minute or two. Switch off the flame and serve hot.
