This is an amazing recipe, totally satisfying our taste buds. It has the richness of potato with a spicy kick. It is great as a side dish for rice, chapathi or any kind of bread. The baby potatoes are so cute and gives a wholesome look to the dish. I made this yesterday as I was too lazy to cut any veggies. We need to pressure cook the baby potatoes and then peel off the skin. This step might be a bit bothering to some people but the end product will bring a BIG SMILE on your face.
Ingredients:
| Baby potatoes | 15 to 20 |
| Red chillies or Red chilli flakes | as needed |
| Mustard seeds | 1 tsp |
| Turmeric | 1/2 tsp |
| Sambhar Powder | 2 tsp |
| Asafoetida | a pinch |
| Curry leaves | 6 to 10 |
| Oil | as needed |
| Salt | as needed |
Method:
1. Boil the baby potatoes with the skin on and adding enough salt. Peel the skin off after boiling. Keep aside.
2. In a frying pan, add oil, red chillies and mustard seeds.
3. After the mustard seeds splutter, add curry leaves, asafoetida, curry leaves, turmeric and sambhar powder. You can replace sambhar powder with red chilli powder if you wish to.
4. The masala powders should lose the raw smell. Add the boiled baby potatoes. Give a good stir and keep the flame very low for about 5 minutes. Cover the pan and cook. Stir it again and cover it for another 3 minutes. Switch off the flame and your dish is ready to be served.
