Starting New Year Celebrations with this yummy Vegan Tutti Frutti Cookies. Saw this on Sharmi’s space and made this yesterday evening. These are so addictive and my family loved them. Make these wonderful cookies and welcome 2015 with a festive mood.
Ingredients:
| All Purpose flour | 1 cup |
| Vegan Butter (I used Nuttelex original) | 6tbsp |
| Powdered sugar | 1/2 cup |
| Tutti Frutti (dried coloured papaya cuts) | 1/3 cup |
| Coconut milk (optional) | 2 tsp – 1 tbsp |
Method:
1. Mix together the vegan butter and sugar and beat them until the mixture becomes fluffy. You can use normal butter if you are not specific about dairy free or vegan.
2. Add the flour, dried papaya cuts and mix well to form a soft dough. You can use about 2 tsp of coconut milk if necessary.
3. Shape the dough into a log shape. Cover it with a butter paper and put it in the freezer for about 40 minutes.
4. After 40 minutes, using a knife cut into thick slices. It is important to cut it as thick slices, otherwise it will break.
5. Bake the cookies in a preheated oven (150 degrees) for 12 – 14 minutes.
6. Cool them completely and enjoy!!!!
Please make sure that the knife is sharp. Otherwise, you are not going to get smooth surfaced cookies. Mine was not sharp enough and hence the look is not so appealing..But they were extremely tasty and easy to make. I will be making these again very soon..What about you?
